One piece of advice I'll offer for when working with oyster mushrooms is that you should never cut them with a knife. You'll need to clean them by hand (like with all mushrooms), but then carefully tear them along the natural lines of the ribboning (you'll know what I mean when you come do to it). Good luck whatever you decide to do with them, they're a great variety!

We were there this morning, too, to get some of that fabulous Sippel kale. Is it just me, or are there fewer veggies this year? And more crafts and baked goods? We live in Worthington and always go to that market. We thought maybe it was just bad market management so we ventured out to Clintonville and found the same problem there - basically just 3 veggie vendors. What's up with that??
