And when I say easy, I mean *easy*. Start to finish to prepare the batter – 5 minutes. No joke. There’s a lady at the Clintonville Farmer’s Market that makes these, and they’re delicious. Not good for you or chock full of natural ingredients, but tasty. Kids would love these. I wonder if these would be just as good with other flavors of cake mix?
Easy Strawberry Cookies

2 eggs
2/3 c. vegetable shortening
1 pkg. strawberry cake mix
1/2 c. chopped nuts
1/2 c. chopped coconut
Combine eggs and shortening. Add half the dry cake mix. Beat well. Add remaining dry mix, nuts, and coconut. Mix thoroughly. Drop by teaspoons onto greased cookie sheet. Bake at 350 degrees for 8-10 minutes.

i first started making cake mix cookies a couple years ago after seeing the recipe on the side. They’re great! the perfect base for anything your mind can imagine and the texture is always perfect.
i think i might have to whip some of these up today! thanks!

I made this recipe without the coconut & chopped nuts. I wouldnt recommend it! It must need these ingredients b/c the cookies tasted like a burnt grease ball without them. They were pretty though.

I saw a similar recipe for strawberry cookies that said to add egg and (get this) a tub of whip topping. Any idea how that would turn out?

i have done the whipped topping version and the cookies were yummy and soft but it is a bit of a sticky mess getting together and on the pan.
