Almost Local Salad

I don’t have a lot of time to post today, so just wanted to make a quick mention of an almost local salad I made about a month ago, when nectarines were still in season.


I took some lettuce mix that I got at Elizabeth Telling Farms, sliced some local onions thinly, some local nectarines (with skin still on) thinly, some schinken from Thurn’s, a few non-local Marcona almonds, and topped it with Pear Gorgonzola dressing from Trader Joe’s. Simple and delicious.

I’m really missing all the fresh produce. I’ve been trying to push myself to cook but haven’t really felt like it. I’ve got tons of squash in the pantry, anyone have any easy squash recipes they’d like to share?
