I'm totally on board with the whole knowing where your food comes from thing, and people probably should experience this once. I'm not sure how squeamish I'd be about killing a chicken (I hadn't thought about a lamb... good Lord), but I suspect I'd be pretty incompetent at it, so I'd probably either let the pros go at it or choose the quickest, least screw-uppable method so as to minimize the suffering of whatever poor animal was slated for my plate.
