One Local Summer 2008 – Week 11


We’re getting near the end now. Just 2 more weeks to go in this year’s One Local Summer. This week, I give you something that takes advantage of all of the lovely potatoes and onions at the farmers market. I’ve made it local by serving it with sausages and sauerkraut from Thurn’s, potatoes from the Worthington Farmers Market, bacon from Thurn’s, and onions from Wayward Seed Farms. The other ingredients were spices/staples that weren’t available locally. This potato salad is like the ones I grew up on – very vinegary and smoky but a tad sweet at the same time. I probably should have grilled the sausages but I ended up just cooking them in the sauerkraut. Enjoy!

German Potato Salad and Sausages

German Potato Salad

5 strips bacon
3/4 cup onion, chopped
2 tablespoons all-purpose flour
2/3 cup cider vinegar
1 1/3 cups water
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon pepper
6 cups sliced cooked peeled potatoes

In a large skillet, fry bacon until crisp; remove and set aside. Drain all but 2 tablespoons of drippings; cook onion until tender. Stir in flour, blend well. Add vinegar and water; cook and stir until bubbly and slightly thick. Add sugar and stir until it dissolves. Crumble bacon; gently stir in bacon and potatoes. Serve warm.
